Recipe: Sweet and Spicy Braised Cabbage

Do you know it takes about an hour to braise cabbage in an oven until it becomes tender and translucent? And what about in an Instapot? Well, just about 5 to 6 minutes! It takes only about 15 minutes of a total time to prepare and cook sweet and spicy braised cabbage in an Instapot. The concept of pressure cooking makes the vegetables cook faster as compared to the traditional way of cooking on a stove. And you need not worry about the retaining the vitamins and minerals in it! This could easily be a great side dish or an appetizer when you want some nice spicy flavour along with your roasted chicken or other meat.

Sweet and Spicy Braised Cabbage

Ingredients To Preparing Sweet And Spicy Braised Cabbage In Instapot

  • 1 tablespoon of sesame seed oil
  • 1 medium cabbage, about 3 pounds, divide into 8 wedges
  • 1 medium grated carrot, about 3/4 cup
  • 1 ¼ cups + 2 teaspoons of water, divided
  • ¼ cup of apple cider vinegar
  • 1 teaspoon of raw demerara sugar
  • ½ teaspoon of cayenne powder
  • ½ teaspoon of red pepper flake
  • 2 teaspoons cornstarch

Instructions To Preparing Sweet And Spicy Braised Cabbage In Instapot

Step 1: Preheat

First, preheat the pressure cooker by pressing brown or sauté button. Let the pot warm up first before you add the essential ingredients to it.

Step 2: Brown the cabbage wedges

Once the pot has warmed up well, you can then add sesame oil and brown the cabbage wedges on one side only, for about 3 minutes.

Step 3: Add the essentials

Add 1 ¼ cup of water, sugar, vinegar, hot pepper flakes and cayenne and swish it around. Then put the cabbage wedges, with browned side facing up and sprinkle some grated carrots on its top.

Step 4: Cook on high pressure

Close the cooker with its lid and let it cook for 5 minutes, at high pressure. After which, use normal pressure release to open the instant pot, just twist the steam valve on the lid, to vent positioning or open. Remove the lid and tilt it away from you, especially your face.

Step 5: Reheat the liquid now

You can now arrange the cabbage wedges and any loose cabbage leaves on a serving platter. Reheat, the liquid used to cook by pressing sauté/brown button, until it boils.

Step 6: Make the sauce

Use a small bowl to mix cornstarch and 2 teaspoons of water to make a slurry and pour it on the cooker base. Boil the cooking liquid mixture until it starts to thicken, pour this sauce over the cabbage wedges and serve.

Braised Cabbage In Instapot

Sweet and spicy braised cabbage is a low on preparation dish but it is extremely rich on flavour. In this, you slice the cabbages in the shape of the wedge so that you can brown them before you braise them. Although it will give you a slight over-roasted taste, it will also be spicy, sweet and you can enjoy it with a tart sauce as well. The best thing about braising cabbages in an Instapot is that you do not have to use too much of water in it. Overall, the liquid requirement in an Instapot is not more than one and a half cup, so you could even use a minimum quantity of water with vinegar as well.

Conclusion

Braised cabbages are usually sour in taste but this one is an exception and tastes better as a side dish or an appetizer. You could also enjoy it solely with a tart sauce. It is not just filling but also rich in flavour. The vitamins in the cabbages will be retained and the good part is unlike the traditional method of cooking cabbages, you do not have to use a lot of liquid to cook it in an Instapot.
